What’s the difference between Collagen and Gelatin?
Collagen is hydrolyzed and readily dissolves in both hot and cold liquids without affecting the texture. It remains completely tasteless. On the other hand, gelatin shares the same tasteless quality but only dissolves in hot liquids. When cooled, gelatin forms a gel-like consistency, which can impact the texture of the final product.
